The goal of Nová česká is to lighten, support, and promote Czech cuisine – at home and abroad.
In this mission, we rely on our principles that help us stay on course:

A proper stock starts with the best meat, bones, vegetables, spices, and water. The quality of ingredients and craftsmanship is the foundation of everything – and it creates the authentic taste of our cuisine.

We buy directly from breeders, growers, fishermen, foragers, butchers… This guarantees quality and allows us to develop and cook our cuisine with the most valuable local ingredients.

We build on tradition, but adapt it to today. And when change leads to improvement, we modernize it and enrich it with inspiration from the world and other cuisines.

Everything we know, we share. We cook, lecture, and spark curiosity among students at culinary schools – so that the younger generation understands the meaning and beauty of our craft and can grow into skilled professionals.
